Question about freezing top of cake for 1 year anniversary?

We are having fondant icing, and I have no clue how to wrap it anyway, but I am not sure how the fondant will turn out. The cake lady told me that when we defrost to keep it covered so the condensation stays on the wrapping. Do any of you guys know how to do this, had any experience or know someone who has, with the fondant? Thanks!!!!
